Winter, a time to rejuvenate and watch Netflix.

Well I can’t say that I’m surprised or shocked that I am once again sick during the holiday season. It only hits me once a year and that once a year time being now. It never fails but then again I feel like there is no better time than now to rest my mind and body, rejuvenate myself as a whole, and even reflect a little bit.

I get in this mood to post a blog and then all of a sudden it fades. I wish I could be consistent with blogging. Is time a factor, mood, or what? I guess a combination of things.

Today’s post is just a hodge podge of thoughts and comments today. I’ve been on a Netflix binge while being sick and here are just a few movies that I highly recommend. Neerja (true story), Colonia Dignidad (true events), and The Siege of Jadotville. All three were excellent. Scary but true. Makes you think about life a little deeper. Yes they all took place at during a different time period than now but things like this still take place in today’s day and age. Crazy.

Yup that’s me walking Mugs. Someone has to right? Sick and all a mom’s work is never done. mugs

Chicken sir fry yum!

Creating meals couldn’t be any easier than this. All it takes is a little gumption and creativity for you to step out of the box once in a while.

If you’re in a hurry but want something cost effective and tasty try this.

Chicken Stir Fry

1 1/2 lb of chicken breast cut up and browned

2 cups of fresh or frozen broccoli florets

2 green peppers and 1 red or 1 16 oz bag of frozen mixed pepper strips

1 6oz can of baby corn(found in oriental food section of your grocery store)

1 4 oz can of water chestnuts

2 cups of soy sauce

1/4 cup of brown sugar

1 1/2 tbsp of ground ginger

2 packages of brown or white rice(boil in bag is what I use)

Except for the rice, mix all ingridents in a large skillet and cook on medium heat approximately 20 mins.

Voila!

My family loved it, it tasted great, and didn’t break my bank!

Quick and easy is what I aim for especially with our schedule. I hope you enjoy.

Remember cooking isn’t an exact science so play around with the flavor a little bit and critique it to how you like it.

Has it been that long…

Since my last post? I have so much to catch up on but with the cold weather setting in I’ll have time.

I’ll just start out slow and post about our venture up north a few weeks ago leaf peeping.  We took the north loop run to catch the changing leaves and oh boy were they gorgeous.  We visited , Racket Lake, Blue Lake, and Indian Lake were some of the places.  There are so many nice places to see in NY. We are lucky to be able to have four beautiful seasons to enjoy.

Saturday breakfast in New York

I finally took pictures of our favorite spot to eat breakfast. It isn’t fancy by far. They serve great food but with no frills. The atmosphere is homey and the people always make you feel welcome.

This Saturday morning one of the waitresses daughter was selling Girl Scout cookies. We were lucky enough to have her set our table and help serve us along with her mom.

If in your travels in upstate New York make sure you try and make a stop in Dolgeville and have breakfast at Motor’s In.

Who knows you just might see us there!
