Winter, a time to rejuvenate and watch Netflix.


Well I can’t say that I’m surprised or shocked that I am once again sick during the holiday season. It only hits me once a year and that once a year time being now. It never fails but then again I feel like there is no better time than now to rest my mind and body, rejuvenate myself as a whole, and even reflect a little bit.

I get in this mood to post a blog and then all of a sudden it fades. I wish I could be consistent with blogging. Is time a factor, mood, or what? I guess a combination of things.

Today’s post is just a hodge podge of thoughts and comments today. I’ve been on a Netflix binge while being sick and here are just a few movies that I highly recommend. Neerja (true story), Colonia Dignidad (true events), and The Siege of Jadotville. All three were excellent. Scary but true. Makes you think about life a little deeper. Yes they all took place at during a different time period than now but things like this still take place in today’s day and age. Crazy.

Easy Chicken Divan


If you’re looking for a quick, simple, easy dinner this is it. You can use grilled or breaded chicken. I used my breaded chicken cutlets that I had left over from the night before last.

Ingredients

~ 3 cups of cooked white or brown rice

~ 14 oz of california blend veggies(frozen or fresh)

~ 1 8 oz can of cream of mushroom soup

~ 1 8 oz can of cheddar broccoli soup

~ 1  8 oz bag of sharp shredded cheddar cheese

~ 1 cup of 2% milk

~ 1 lb of cut up cooked chicken breast

salt, pepper, garlic powder to taste.

Combine rice, cream of mushroom,  broccoli cheddar soup, and 1 cup of milk in a medium size bowl and mix.

Mix chicken, veggies, and 4 oz of cheddar cheese in a big bowl.After combine all ingredients together and place in a casserole dish. Cover with the remaining cheese.

  • Bake at 375 for 45 minutes.

Grilled chicken and broccoli with alfredo sauce


Okay, so here it is but not back by popular demand haha. Here is my broccoli and grilled chicken with homemade alfredo sauce. Following the recipe for the alfredo sauce listed in Sauces and Gravies, and just add broccoli and grilled chicken. Sometimes I like to change it up with California blend vegetables also.

Another special added touch I love to do in the fall and winter months is make the recipe as is and bake in the oven at 375° for about 30 to 35 minutes with a 1 1/2 cups of shredded mozzarella cheese on top. It turns it into a great baked casserole dish.
