What is your favorite type of weather?

I live in upstate NY and you all probably know what that’s like. On average, we get about 8 months of cold/rainy/snowy weather and 4 months of rockstar weather. I love the change of seasons. Like everything else in life, even the sunshine could get exhausting also. I need to see those leaves changing to the fiery reds, burnt oranges, golden yellows, and deep purples. There’s also a different smell in the air. The smell of camp fires magically appear out of nowhere. Even the sounds are different. When the wind blows, you can hear the rustle of the leaves blowing across the ground. At the end of summer, my mom always said, “the trees, grass, and bugs are tired, and they need to rest too.” At first, I didn’t understand what she truly meant but I see it now. The once bright fresh greens that the leaves used to be now appear subdued and look like a deep olive color.

Change is good. I welcome change and I don’t mind whatever mother nature brings my way. I really love all types of weather in upstate NY.

Stop Doing IT


What is “it?” It is anything that you don’t want to be doing. I’m still tip toeing around people in order to give them what they want and what they want to hear. I’m not doing this all the time just more than I want to at this point. I’ve gotten a lot better. I’m sure there are many of you who do the same. It’s internally agonizing. We fret over it constantly.

What is the issue with saying the word “no?” Why can’t we just spit it out. It’s the word we want to use but are afraid to for so many reasons. Reasons being, we are compassionate and caring people. How much more do you have to give? We say yes a lot of the time to make others happy but isn’t it time you make yourself happy? I’m 52-years-old and it’s time. I can’t spend the rest of my life for others.

It’s not just about the word “no.” It encompasses so much more. It’s really about our ability of not being able to give ourselves what we need. What is it that we really need? And is what we need a lot to be asking for?

Some wants are not materialistic and some wants don’t cost a penny. The want is something we desire from within. It’s peace. That’s it. It’s having mental peace. Peace with feeling and knowing you are doing exactly what you want.

Just do it. Take that step and don’t feel guilty about taking care of you.

I just made THE BEST GLUTEN FREE PANCAKES EVER.

Shit you not. I am not going to make this long and drawn out. Below are the ingredients and instructions. Have at it and let me know how you like them!

INGREDIENTS

1 cup of Bob’s Red Mill 1 for 1 Gluten Free Flour

2 tablespoons of sugar

1/2 table spoon of baking powder

1 teaspoon of salt

2 tablespoons of unsalted melted butter

1 1/2 cups of any kind of milk(I used almond milk)that’s all I had(get it to a nice consistency. – pourable)

2 teaspoons of vanilla extract

1 egg

INSTRUCTIONS 

  • In a large mixing bowl, mix the flour, sugar, baking powder and salt in your mixing bowl.
  • In a large measuring cup, melt the 2 tablespoons of butter in the microwave.
  • Next, add vanilla extract to the milk and butter.
  • Whisk your egg well and add. to the previous mixture
  • Add the liquid ingredients to the dry ingredients and mix until just combined. The batter will be slightly lumpy which is good. If the batter feels too thick to you, add a splash of milk and mix again.
  • Use a non stick frying pan or griddle, heated up and add butter or cooking spray.
  • Serve pancakes fresh with your favorite fruit and some warm maple syrup.
  • Store leftover batter in an airtight container in the refrigerator for 2-3 days. To make fresh pancakes, simply warm your frying pan and scoop batter directly from the refrigerator.
